Recipe: Patty Pan Squash Hash

A cozy skillet meal that’s simple, savory, and perfect for summer squash.

Ingredients

  • 1 lb ground pork sausage (mild or hot Italian-style works great)
  • 3 medium patty pan squash, cubed
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 3–4 cups fresh spinach
  • 1 ½ tsp Italian seasoning
  • ½ tsp smoked paprika (optional)
  • Salt & black pepper, to taste
  • Olive oil, if needed
  • Optional toppings: grated parmesan, red pepper flakes, fried egg

Instructions

  1. Heat a large skillet over medium heat. Add the ground pork sausage and cook until browned and cooked through, breaking it up with a spoon. Remove excess grease if needed.
  2. Add the onion and cubed patty pan squash to the skillet. If the pan looks dry, add a drizzle of olive oil. Cook for 8–10 minutes, stirring occasionally, until the squash is golden and tender.
  3. Stir in the garlic, Italian seasoning, smoked paprika, salt, and pepper. Cook for 1 minute until fragrant.
  4. Add the spinach in batches, stirring until wilted.
  5. Taste and adjust seasoning. Serve hot with parmesan, red pepper flakes, or a fried egg on top if you’d like!
