Recipe: Patty Pan Squash Hash
A cozy skillet meal that’s simple, savory, and perfect for summer squash.
Ingredients
- 1 lb ground pork sausage (mild or hot Italian-style works great)
- 3 medium patty pan squash, cubed
- 1 small onion, diced
- 3 cloves garlic, minced
- 3–4 cups fresh spinach
- 1 ½ tsp Italian seasoning
- ½ tsp smoked paprika (optional)
- Salt & black pepper, to taste
- Olive oil, if needed
- Optional toppings: grated parmesan, red pepper flakes, fried egg
Instructions
- Heat a large skillet over medium heat. Add the ground pork sausage and cook until browned and cooked through, breaking it up with a spoon. Remove excess grease if needed.
- Add the onion and cubed patty pan squash to the skillet. If the pan looks dry, add a drizzle of olive oil. Cook for 8–10 minutes, stirring occasionally, until the squash is golden and tender.
- Stir in the garlic, Italian seasoning, smoked paprika, salt, and pepper. Cook for 1 minute until fragrant.
- Add the spinach in batches, stirring until wilted.
- Taste and adjust seasoning. Serve hot with parmesan, red pepper flakes, or a fried egg on top if you’d like!
